Turkey Enchilada Casserole

3 dz Albuquerque Tortilla Yellow Corn Tortillas
1.5 lbs of shredded turkey
1.5 lbs shredded cheddar or jack cheese
1 bag Albuquerque Tortilla Red Chile Sauce (you may also use frozen Albuquerque Tortilla Red Chile to make your own sauce)

Warm Albuquerque Tortilla Red Chile Sauce and set aside. Heat oil in a fry pan, soften each corn tortilla in oil and drain on paper towel. Dip each corn tortilla in red sauce and lay 12 tortillas in bottom of a 9 x 13 in. pan. Lay 1/3 of turkey and 1/3 of cheese, along with 2 cups red sauce on tortillas. Repeat layers 2 more times, adding additional cheese on top if desired. Bake 350 degrees for about 30-40 minutes or until heated through and cheese is browned.

Serve with lettuce, tomato, and sour cream.
