Tamales

Thaw 5lbs of Albuquerque Tortilla unprepared masa
Add 1 1/2 lbs lard and 1 oz salt. (Optional 4 oz red chile for color)
Add 16 oz of water or juice from meat to masa
Mix all ingredients together until masa is smooth

Making Tamales
Spread 2 oz of masa on half of the hoja (corn husk)
Put 2 oz of filling onto the corn husk, then fold one side to the middle then the other side to the middle, then fold in half.
Steam tamales until corn husk separates from masa without sticking.
